1 1/2 cupscooked WHITE PEA BEANS375 mL
1 1/2 cupsdiced English cucumber375 mL
1 cupdiced seeded tomatoes250 mL
1/2 cupdiced sweet green pepper125 mL
1/2 cupcrumbled feta cheese125 mL
1/3 cupdiced red onion75 mL
1/4 cupchopped, pitted black olives50 mL
2 tbspred wine vinegar25 mL
1 1/2 tspdried oregano7 mL

6red or green leaf lettuce leaves6
to tastetzatziki sauce (optional)to taste

Combine all ingredients except pitas, lettuce and tzatziki in a bowl. (May be made several hours in advance). Place lettuce leaves on top of flat pita. Spoon filling in the middle. Roll up sides of pita with bottom of pita smaller than the top. Wrap bottom of pita with wax paper for easy handling. Serve with tzatziki on the side.
