3/4 cupboiling water175 mL
3eggs3
1/2 cupvegetable oil (such as canola)125 mL
1 1/2 cupswhite sugar375 mL
1(14 oz/398 mL) can of Beans in Tomato Sauce1
1/2 cupapplesauce125 mL
1/2 tspsalt2 mL
3 cupsflour750 mL
1 tspvanilla5 mL
1 tspbaking soda5 mL
1 tspcinnamon5 mL
1 tspbaking powder5 mL
1 cupwalnuts (optional)250 mL

Mix raisins with boiling water, stir and set aside. Beat eggs, oil, applesauce, sugar, vanilla and beans. Add flour, remaining ingredients, including raisins and water. Mix well. Spoon batter into large paper muffin cups. Bake at 325 F (160 C) for 30 minutes.
