2 cupsWHITE PEA BEANS, soaked and cooked or canned in water: drained and rinsed500 mL
2large stalks celery, thinly sliced on the diagonal2
1small red onion, halved and thinly sliced1
1/2small red pepper, thinly sliced1/2
1/2small green pepper, thinly sliced1/2
1 cupcherry tomatoes, halved250 mL
1 cuparugula 250 mL
1 tbspfresh chives, chopped15 mL
1 tspfresh garlic, minced5 mL
1 tspDijon mustard5 mL
1 tbspbalsamic vinegar15 mL
1/2 cupolive oil125 mL

In a large glass or plastic serving bowl, combine beans, celery, onion, peppers and tomatoes and set aside.

In a small mixing bowl, combine the garlic, mustard and vinegar. Slowly whisk in the oil and season with salt and pepper. Pour over the bean mixture and mix well. Cover and refrigerate for at least four hours or overnight before serving.

Just before serving, add arugula and chives and toss lightly. Adjust seasonings as needed.
