| Introduce a little Mexican into your next family dinner, courtesy of Baked Beans. It's quick, easy, looks great and is sure to please. You can add other toppings for variation--chopped green pepper, chopped green chilies or sour cream. Or use the beef-bean mixture as a filling for tacos or tortillas. | |
| 1 lb | ground beef | 500 g |
| 1 | can (14 oz./398 mL) Beans in Tomato Sauce | 1 |
| 1/2 cup | chili sauce | 125 mL |
| 1/2 cup | water | 125 mL |
| 1 tsp | chili powder | 5 mL |
| 1/4 tsp | hot pepper sauce | 1 mL |
| 2 cups | corn chips | 500 mL |
| 1/2 cup | shredded Cheddar cheese | 125 mL |
| 1 cup | shredded lettuce | 250 mL |
| 1 | medium tomato, chopped | 1 |
In large frying pan, brown beef. Drain off fat. Stir in beans, chili sauce, water, chili powder and hot pepper sauce. Bring to a boil, simmer 5 minutes. Spoon into a shallow baking dish (11-inch/27 cm round dish). Sprinkle corn chips around the edge and top with cheese. Place under preheated broiler just until cheese melts. Garnish with lettuce and tomato.
