Greek Style Bean Pitas

- 1 1/2 cups cooked WHITE PEA BEANS (375 mL)
- 1 1/2 cups diced English cucumber (375 mL)
- 1 cup diced seeded tomatoes (250 mL)
- 1/2 cup diced sweet green pepper (125 mL)
- 1/2 cup crumbled feta cheese (125 mL)
- 1/3 cup diced red onion (75 mL)
- 1/4 cup chopped, pitted black olives (50 mL)
- 2 tbsp red wine vinegar (25 mL)
- 1 1/2 tsp dried oregano (7 mL)
- 1/4 tsp salt (1 mL)
- 1/4 tsp pepper (1 mL)
- 6 whole wheat pita
- 6 red or green leaf lettuce leaves
- to taste tzatziki sauce (optional) to taste
Instructions
Combine all ingredients except pitas, lettuce and tzatziki in a bowl. (May be made several hours in advance). Place lettuce leaves on top of flat pita. Spoon filling in the middle. Roll up sides of pita with bottom of pita smaller than the top. Wrap bottom of pita with wax paper for easy handling. Serve with tzatziki on the side.
