Description

Cooked noodles, shiitake mushrooms, carrots, kimchi, green onion, and white kidney beans packed into a jar. Just add hot water when ready to eat.


Ingredients

  • 6 oz instant noodles (285 g packages) or rice noodles (170 g)
  • 4 tsp miso paste (20 mL)
  • 4 tsp soy sauce (20 mL)
  • 4 tsp chili-garlic sauce (20 mL)
  • 4 tsp sesame oil (20 mL)
  • 1 (19 oz) can white kidney beans, drained and rinsed (540 mL)
  • 1 cup kimchi (250 mL)
  • 1 package shiitake mushrooms, stems removed, caps thinly sliced (100 g)
  • 1 carrot, large, peeled and julienned
  • 4 green onions, thinly sliced
  • 1/2 cup loosely packed chopped fresh cilantro (125 mL)

Instructions

Par boil the noodles. If using instant noodles, cook the noodles in medium sized pot of boiling water for 1 minute. If using rice vermicelli, cook the noodles in medium sized pot of boiling water for 3 minutes. Immediately drain in a colander and rinse with cold water to halt the cooking process. Allow to drain and cool completely.

Line counter with four 16 fl.oz (475 mL) wide-mouth mason jars. To each jar add 1 tsp (5 ml) of miso paste, 1 tsp (5 ml) of soy sauce, 1 tsp (5 ml) of chili-garlic sauce, and 1 tsp (5 ml) of sesame oil.

Pour beans into a colander or strainer, rinse with cold water; drain completely. Divide beans evenly between the four mason jars. Add ¼ cup (60 mL) of kimchi to each jar. Divide sliced mushrooms, carrot, and green onions evenly between the four mason jars, lightly pressing ingredients down into bottom of jar. Divide par-boiled noodles evenly between the four mason jars and top with cilantro. Place cap on jar and refrigerate until ready to serve.

To serve, boil water in a kettle or small pot. Pour over ingredients in mason jar; place cap on jar and gently swirl to mix all flavourings at the bottom. Remove cap and let sit for 3-5 minutes. Empty the noodles into a bowl or enjoy straight from the jar.
