  • 1 cup milk of choice, room temperature (250 mL)
  • 1/2 cup canola oil (125 mL)
  • 1 tsp vanilla (5 mL)
  • 2 large eggs, room temperature
  • 3 tsp lemon zest (15 mL)
  • 1 cup fresh or frozen blueberries 250 mL
  • 1/2 cup sliced almonds, plus 1 tbsp for topping (optional) (125 mL)
