1large onion, chopped1
4cloves garlic, finely chopped4
1sweet red pepper, chopped1
2stalks celery, chopped2
2jalapeno peppers, chopped2

2 tspground coriander (cilantro)10 mL
1/2 tspcayenne pepper2 mL
1/2 tspsalt2 mL
1/4 tsppepper2 mL
3 cupsWHITE PEA BEANS, soaked and cooked or canned in water: drained and rinsed750 mL
1can (28 oz./796 mL) plum tomatoes, broken up1
1can (14 oz./398 mL) tomato sauce1
1can (5 1/2 oz./156 mL) tomato paste1
1 cupfrozen corn250 mL
2large chicken breasts, skinned and boned, cooked and cut into bite-sized pieces2
2 tbspfresh coriander, chopped25 mL
juice of one lime

In a large saucepan or skillet, heat oil over medium heat. Saute onion, garlic, celery, peppers and dried seasonings over low heat for about 20 minutes. Add beans, tomatoes, tomato sauce and tomato paste. Simmer gently for 20 minutes. Stir in cooked chicken and corn and cook until heated through. Before serving, add lime juice and fresh coriander and stir gently. If desired, garnish with grated cheddar cheese and sour cream.
