- 2 English cucumbers
- 1 cup (25 mL) white pea beans, drained and rinsed
- 1 small red onion, thinly sliced
- 1 jalapeno, stemmed, seeded, and minced
- 2 tbsp (30 mL) chopped cilantro
- 1 tbsp (15 mL) lemon juice
- 2 tsp (10 mL) sugar
- 1 tsp (5 mL) chaat masala (Indian spice blend)
- 1/2 tsp (2 mL) cumin
- 1/2 tsp (2 mL) each salt and pepper
- 1/4 tsp (1 mL) red chili powder
- ½ cup (125 mL) roasted unsalted peanuts, finely chopped
Garnish: chopped fresh cilantro or mint
Instructions
- Remove and discard the ends of the cucumber. Slice cucumber down the middle, lengthwise. Using a spoon or scoop, deseed the cucumber. Place cucumber cut side down and slice in half again, lengthwise. Slice into small quarters.
- In a large bowl, combine the cucumbers, beans, red onion, jalapeno, and cilantro.
- In a small bowl, whisk together the lemon juice, sugar, chaat masala, cumin, salt, black pepper, and red chili powder.
- Pour the dressing over the cucumber and bean mixture and toss gently to coat all the ingredients evenly.
- Allow the salad to marinate in the refrigerator for at least 15 minutes to allow flavors to meld together.
- Top with peanuts. Taste and adjust seasonings as necessary; adding more salt, lemon juice, or spices according to your preference. Serve alongside grilled meats and rice for a complete meal.
Notes
Don’t have chaat masala on hand? Try adding garam masala instead for a different flavour profile.
