Garlicky White Bean and Spinach Melts

Description

This recipe is a delicious combination of creamy white beans sauteed spinach, garlic, onions and chili flakes piled onto your favourite toast and topped with provolone cheese. This recipe comes together in about 20 minutes and is hearty and comforting.


Ingredients

  • 2 tsp olive oil or cooking oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, thinly sliced
  • 1 x 19oz can of white beans, drained and rinsed
  • 4 cups of baby spinach (Swiss Chard would also be tasty)
  • Pinch of chili flakes
  • 12 thin slices of provolone cheese
  • 6 slices of your favourite bread.
  • Salt and pepper to taste

Instructions

Heat the oil over medium heat. Add the onion and garlic and cook for 3-4 minutes until it starts to soften. Add the white beans and spinach and mix. Add a pinch of salt and chili flakes (feel free to add more chili flakes if you like spice). Cook for about 5 minutes until the spinach is wilted and the beans are warm.

While the beans and spinach are cooking, preheat the oven broiler to high. Place the slices of bread on a parchment-lined baking sheet. Toast the bread under the broiler lightly. Remove from the oven. Add a slice of cheese to each piece of bread. Pile on the white bean mixture, evenly dividing it between the slices of bread. Place a slice of cheese on top.

Place them under the broiler for 2-3 minutes until the cheese has melted. Watch the toast closely to ensure they do not burn.
