
Raisin Bean Muffins
Ingredients

- 1 cup raisins 250 mL)
- 3/4 cup boiling water 175 mL)
- 3 eggs
- 1/2 cup vegetable oil (such as canola) (125 mL)
- 1 1/2 cups white sugar (375 mL)
- 1 (14 oz/398 mL) can of Beans in Tomato Sauce
- 1/2 cup applesauce (125 mL)
- 1/2 tsp salt (2 mL)
- 3 cups flour (750 mL)
- 1 tsp vanilla (5 mL)
- 1 tsp baking soda (5 mL)
- 1 tsp cinnamon (5 mL)
- 1 tsp baking powder (5 mL)
- 1 cup walnuts (optional) (250 mL)
Instructions
Mix raisins with boiling water, stir and set aside.
Beat eggs, oil, applesauce, sugar, vanilla and beans. Add flour, remaining ingredients, including raisins and water. Mix well.
Spoon batter into large paper muffin cups. Bake at 325ºF (160ºC) for 30 minutes.
