Teriyaki Chicken and Beans

Ingredients

  • 2 tbsp soya sauce (25 mL)
  • 2 tbsp lemon juice (25 mL)
  • 1 clove garlic, minced
  • 2 tsp dry mustard (10 mL)
  • 1/2 tsp ground ginger (2 mL)
  • 1/4 cup honey (60 mL)
  • 1/4 cup brown sugar (60 mL)
  • 1/4 tsp pepper (1 mL)
  • 1 tbsp vegetable oil (15 mL)
  • 4 boneless, skinless, chicken breast halves
  • 1 can (14 oz./398 mL) Beans with Pork in Molasses Sauce
  • 4 green onions, sliced in 1/2 inch (2 cm) pieces

Instructions

Combine soya sauce, honey, brown sugar, lemon juice, garlic, mustard, ginger and pepper; set aside.

In frying pan, heat oil over medium-high heat. Add chicken; brown on both sides. Drain off fat, if necessary. Reduce heat, stir in sauce mixture. Cover and simmer 10 to 15 minutes or until chicken is no longer pink. Stir in beans and green onions; heat through.

Serve with sautéed snow peas and red peppers, if desired.

Notes

Pressed for time? Substitute 1/2 cup prepared Teriyaki sauce in this recipe for a speedy prep.
