Black Beans

Chili-Stuffed Baked Potatoes with Chipotle Cream

This is a tasty, basic chili with no fancy surprises or anything, just pure fall comfort. The addition of masa harina at the end thickens it up a bit and since we are eating it over baked potatoes, I wanted a thicker chili as opposed to a soupier chili. It's not spicy either so that it can please all of the people in the house - the chipotle cream adds heat for those who want it. Make the chili ahead of time for an easy weeknight dinner. It’s also a great way to use up the leftover chili!

These Crispy Black Bean and Sweet Potato Quesadillas make the perfect weeknight meal. Topped with a gooey Mexican cheese blend, these quesadillas offer the ultimate comforting flavour combination.

Creamy Black Bean Taco Soup

Enjoy your favourite vegetarian taco flavours surrounded by a spicy, creamy broth! Black beans are the star of the show here, and they’re married with flavourful spices and plenty of veg. Like tacos, the toppings are the fun part, so heap bowls of this delicious and nutritious soup high with shredded cheddar, avocado, cilantro, and tortilla chips. Hearty, simple, and oh-so-satisfying, this soup is the perfect make-ahead meal for easy lunches and dinners.

Maple Bacon Baked Beans

Baked beans are hearty and delicious comfort food. This quick version uses both canned black beans and white beans, making them an ideal weeknight side-dish. With sweetness from the maple syrup and smokiness from the bacon, not to mention other aromatics such as espresso powder and Dijon mustard, it’s no wonder why people flock to the kitchen while they’re in the oven. Rich and deeply flavourful, these baked beans just need some crusty bread or corn bread on the side.

Tex-Mex Quinoa Skillet

This Tex-Mex quinoa skillet is a budget-friendly, flavourful, and hearty meatless meal perfect for any night of the week. It comes together in one pot and the whole family will love it.

Aji Verde Dense Bean Salad

The internet is buzzing with dense bean salads right now. After some Tik Tok investigation, I was surprised to learn that I have been making them for years! A big, protein bomb salad that keeps in the fridge all week that I can reach for a couple of times a day keeps me alive when life gets super hectic. It gets better every day as the ingredients marinate in the dressing, too. Instead of a basic vinaigrette, I like to make my favourite Peruvian sauce/condiment for the dressing. Despite the mayo (you can use low-fat mayo), it is not heavy, it is a bit spicy, it’s tangy, and it’s pretty and delicious. You can make this salad vegan using vegan mayo and feta. It is low fat, protein rich, high fibre and dense - it will fill you up and keep you feeling full. I used a combo of white and black beans, but you can use whatever you have. Just remember to make it colourful, crunchy and deliciously beany.

Black Bean Quinoa Open Faced Burger

Here is a great vegetarian/vegan burger version that packs flavor and texture all in one patty, from the crispy surface to that rich velvety interior. Nice zesty notes from the roasted red peppers, and loads of freshness coming from the lettuce and mango black bean salsa. Looking for a lighter, healthy alternative? This is your best bet! Absolutely scrumptious!
